Many heirloom beefsteaks display this exact behavior. During the peak heat of mid-summer, plants often push too much water into the fruit, diluting the flavor. As fall approaches and the night temperatures drop, the ripening process slows down significantly. This allows the plant more time to concentrate complex sugars and acids in the fruit, resulting in a much richer, bolder tomato flavor!

📌 Quick Summary (TL;DR): Mr. Underwood’s Pink German Giant 🌍 Origin: A fantastic heirloom variety originating from the USA, tracing back to German roots. 🌿 Plant Habit: Indeterminate (tall).
